First cookies in Year 2013

After Xmas, I gotta start to earn CNY cookies. What types of cookies shall I try? I started to recall my past experience of CNY cookies with my mum, grandmum, aunts.. Kuih kapek is a MUST in our family. But now, I have no tools to do it, and it needs many helpers in doing this type biscuit. So, forget about this, and go buy from outside, easier!!
I've search many recipes from books, Internet, and sharing from Facebook group, and finally I use this recipe: 

Ingredient: 
1. Peanut ground - 250g
2. medium protein flour - 250g 

3. peanut oil - 160ml, (added 8 tsp cue to the dough is too dry)
4. icing sugar - 140g
5. vanilla essence- 1tsp 

Glazing
1 egg yolk with 1 tsp water

Method: 
1. Mixed well peanut ground, icing sugar, add in peanut oil at the middle of the mixture, then follow by vanilla essence, knead well into smooth dough. 
2. divide and roll the dough into balls, arrange in a greased baking tray (or on a baking sheets on a baking tray) 
3.  stamp with a small round cover on top of the balls, make it looks like traditional peanuts cookies. (optional)
4. Glaze the top of cookies with egg yolk. 
5. Bake in preheat oven at 170°C for 20mins. 




I like it so much, erm.. delicious.
